Syrup Processing Line

A syrup line for high-Brix products up to 70 degrees Brix, where dissolving, filtration and hot filling handle viscosity that standard juice equipment cannot.

High Brix changes every component

At 65-70 degrees Brix the product is viscous enough that centrifugal pumps cavitate and standard filler valves under-fill. Positive displacement pumps, heated lines and enlarged ports are not optional extras on a syrup line.

Dissolving without caramelising

Sugar dissolves best with gentle heating and agitation rather than high local temperature. Overheating at the injection point caramelises a small fraction and darkens the whole batch, which is invisible until the product is in the bottle.

Hot fill protects the product

At 85 degrees C filling, the syrup pasteurises the container as it fills. Combined with an acidic pH this gives 12 months ambient stability without preservatives.

Frequently Asked Questions

Why not use a standard juice line?

Above about 55 Brix the viscosity causes cavitation and inaccurate filling on juice-rated pumps and valves. A syrup line is specified for viscosity from the start.

Does hot fill work for PET?

Only with heat-set PET designed for it. Standard PET deforms above 65 degrees C, so glass or heat-set bottles are required.

How is Brix controlled?

Batch refractometer before filling, plus optional inline check on the filler line.
